Nautakjötið frá John Stone er þurr meyrnað í 21 til 28 daga. Allir vöðvar eru sérvaldir úr fitusprengdum Írskum nautgripum sem eingöngu hafa verið fóðraðir á grasi. Gripirnir eru í lausagöngu 10 mánuði á ári.

Nautakjötið frá John Stone er marg verðlaunað og hefur meðal annars hlotið gullverðlaun í World Steak Challenge árin 2017, 2018 og 2019.

Kjötið sem selt er undir merkjum John Stone er handvalið af reynslumiklum kjötskurðarmeisturum, einungis 12% af þeim 330.000 gripum sem koma í gegnum sláturhús fyrirtækisins standast þær kröfur sem gerðar eru til vörumerkisins. Annað kjöt fer í almenna sölu.

Við þurr meyrnun er kappkostað að ná fram tveimur lykil þáttum. Annars vegar meiri mýkt í kjötið og hins vegar að draga fram bragðgæðin í kjöti og fitu. Við framleiðsluna stytta menn sér aldrei leið. Árangurinn næst með viðurkenndum hefðum, tíma og natni við hráefnið.
